I've had tuna melts at three of the places you've put on your list, Evan, and you are spot on. Santa Monica Seafood, though seemingly obvious, is a venue I'll have to try for its dine-in experience and not purchasing fresh seafood as I've done at least 100 times over the years...who knew?
Max and Helen's has entered the chat.... It's pretty perfect. Also, there are 50 Trimanas socked away in various upscale SoCal office buildings and they make a dependably generous, perfectly greasy tuna melt. Ask for rye, tomato and Swiss, pay extra for avocado.
